Overview
What is tandoori cooking?
Tandoori cooking is a method of cooking food in a clay oven at a high temperature in excess of 400c. You can use a tandoori oven which is very versatile, to cook all sorts of food including meat, fish and vegetables.
To create the perfect meat recipe (even tikka style meat as in a restaurant) ideally the meat needs to be left to marinade in the fridge for up to 24 hours or more before use and then the food is then skewered and placed vertically in the clay tandoor pot where the intense heat seals all the flavours of the meat and will then quickly cook the food.
Impress your family and friends with this lovely and simple to use charcoal tandoori oven which is made from Stainless Steel with a carefully crafted reinforced layered clay pot in the centre. The clay is of the finest quality and is strengthened using traditional natural materials which have been used for centuries in the making of clay oven pots and is layered to help prevent cracking, which is a natural thing that happens when clay is fired and is nothing for you to worry about. The oven floor is made from a different clay material which adds strength and helps prolong the life of the floor.
Cooking in a tandoori oven is a perfect way of cooking that special food for all the family and friends. Once lit and when it reaches the optimum operating temperature for cooking (of 400°c +) in approx 45 - 60 mins, you will be able to continue cooking in this beautiful Tandoori oven for about 2 hours or so. Depending on how long you continue to cook for, this will burn approx 5 kgs of charcoal in an average cooking session.

Tips
We have put together here some tips for both lighting and cooking in your tandoori oven which we hope you will find useful.
A few simple steps to lighting your tandoor oven and keeping it hot:
Firstly it is strongly suggested that when you purchase you tandoor oven that at the same time you purchase one of the oven fire grates. Not only does this help with lighting your tandoor oven, but it will also help to keep your oven hotter for longer.
After placing your oven fire grate in the bottom of your oven pot, we suggest placing a mixture of firelighters and charcoal.
Don't worry if you haven't got one of the oven fire grates, simply follow the instructions below. Please follow these instructions as correct positioning of the firelighters and charcoal will help to burn your fire more evenly and therefore get your tandoor to a better temperature and help it stay hotter longer.
It is important to make sure that the charcoal at the back fires up, so place 3 firelighters to the back of the oven and the place the rest out evenly. Build around the firelighters some charcoal and then light the firelighters.
As soon as the firelighters have lit and burning, gently add some further charcoal (at least 2 kgs) to the fire.
After approx 15 mins of burning, carefully add another 3 kgs to the already burning charcoal and allow for all the charcoal to light and burn through, bringing your tandoor oven up to the correct operating temperature for cooking.
After approx 45 - 60 mins your tandoor oven should now be ready for cooking in.
How to obtain the best cooking results in a tandoor oven:
The hotter the tandoor oven gets, the quicker the food will cook. At the optimum cooking temperature, you can cook skewered pieces of chicken in approx 8 mins.
To prevent the last piece of meat on a skewer from charring or being burnt, push on either a layer of onion or a slice of potato.
It is always best to check you food half way through cooking to check on the progress of the cooking. It is also an ideal time to baste your food with some butter or fresh marinade before continuing to cook.
When you are happy that the food is cooked and ready to serve, please make sure that you remove the skewers in the same order as you placed them in the tandoor oven.
For joints of meat you will need to use probably 6 or more skewers to support you meat in the tandoor oven. It also will help if you place some foil over the end of the meat nearest to the charcoal (bottom of skewers) as this will help to prevent the meat being burnt to a cinder.
Best of all sit back with a beer while your food is cooking and when ready - SIMPLY ENJOY.
